Ethiopian Cuisine: The Taste Lingers
Some culinary experiences stay with you forever. Years ago, during our stay in Columbus, Ohio, we used to cross the Olentangy River to visit a quaint Ethiopian eatery called Dukem. The standout dish that we still crave today is Minchet Abesh paired with soft, rolled Injera.
Taking inspiration from those memories, we’ve adapted the dish for our home kitchen in Kolkata! We substituted the ground beef with slow-simmered mutton keema and crafted a quick 45-minute version of rollable Injera using everyday kitchen staples (atta and maida—no hard-to-find teff flour required).
The result? Pure nostalgia on a platter.

This looks pretty appealing. I have never had Ethiopian food before.
I had to look up the ingredients Biswajit but the dish sounds delicious, well worth the river crossing!
